Today I have been very festive and decided to give Christmas cupcakes a go and also learnt how to make a Moscow Mule cocktail. Here are the recipe’s for you to try too!
I chose red velvet cupcakes, simply because I felt the red was very festive plus I fancied a change from your normal vanilla cupcakes.
For the red velvet cupcakes
60g unsalted butter, at room temperature
150g caster sugar
1 egg
10g cocoa powder
20ml red food colouring (I used Dr. Oetker’s or you can use a paste colouring as
red food colourings vary in strength)
½tsp vanilla extract
120ml buttermilk
150g plain flour
½tsp salt
½tsp bicarbonate of soda
1½tsp white wine vinegar
Once you have made your cupcakes and let them completely cool down, it’s time to ice them! I used conventional butter icing as I don’t like creme cheese icing!
For the icing:
80g unsalted butter, at room temperature
250g of icing sugar
When mixing add a few tablespoons of milk gradually to get the thick creamy texture, and then you can decorate!..
When you want to tuck into your Christmas cupcakes make sure to make yourself a Moscow Mule, I found out about this when purchasing a copper mug from Urban Outfitters so I had to try this winter cocktail. Copper mug is optional but looks very Pinterest worthy 😉
